Chocolate Cookies (Cocoa Cookies)
112 g Margarine (1 cup)
100 g Brown Sugar (¾ cup)
80 - 100 g Sweetened Cocoa / 50 g Cocoa plus White sugar
1 tbsp Soy Sauce
125 g Flour, preferably Cake Flour (low gluten) (¾ cup)
1 tsp Vanilla Extract
1 tsp Baking Soda
Mix dry ingredients (esp. cocoa with flour), then add soft/liquid ingredients. DO NOT OVERMIX; NO GLUTEN DEVELOPMENT!
If too dry, add a bit of water, but it should feel like plant soil and stick together when you squeeze it. Add chocolate chips, if preferred.
Take about 1 Tbsp of dough and form a ball in your hand.
Place on oiled or parchment-lined surface, press a fork for visual effects or leave them like they are.
Bake 350 F for 10 min
